Keto Zucchini Noodles with Pesto Recipe

Keto Zucchini Noodles with Pesto is a low-carb, high-fat dish that is perfect for those on a keto diet and seeking weight loss. Ingredients:

- 3-4 medium-sized zucchinis

- 1 cup fresh basil leaves

- 1/4 cup pine nuts

- 1/4 cup grated Parmesan cheese

- 2 cloves garlic, minced

- Juice of 1 lemon

- 1/4 cup extra virgin olive oil

- Salt and pepper to taste


Instructions:

1. Use a spiralizer or julienne peeler to create zucchini noodles. Set aside.

2. In a food processor, combine basil leaves, pine nuts, Parmesan cheese, minced garlic, lemon juice, and salt and pepper. Pulse until ingredients are well-combined.

3. With the food processor running, drizzle in the olive oil until a smooth pesto sauce is formed. Adjust seasoning if needed.

4. Heat a large skillet over medium heat. Add the zucchini noodles and cook for 2-3 minutes, or until they are slightly softened but still retain a bit of crunch.

5. Remove the skillet from heat and add the pesto sauce to the zucchini noodles. Toss until the noodles are coated evenly.
